Also known as the shoulder tender, the Teres Major is a rare, highly tender cut from the chuck section (specifically near the shoulder blade). It's the second most tender muscle in the entire animal, right behind the tenderloin. Their genetics trace back to Japanese Wagyu lines, with meticulous attention to animal welfare and sustainable farming.
