We’re taking real acorn-fed Spanish Ibérico pork belly, rubbing and curing it in-house, then smoking it over post oak right here at Sparrow Market.

Ibérico is all about the fat. It’s beautifully marbled, rich in oleic acid, and melts as it cooks, giving the pork that signature buttery, nutty, melt-in-your-mouth flavor.

Some of the best pork in the world turned into some seriously incredible bacon.
